→ Crispy Chicken

01 - 2 large chicken breasts, cut into strips
02 - 1 cup buttermilk
03 - 1 cup all-purpose flour
04 - 1 cup panko breadcrumbs
05 - 1 teaspoon garlic powder
06 - 1 teaspoon smoked paprika
07 - 1 teaspoon salt
08 - ½ teaspoon black pepper
09 - Vegetable oil for frying

→ Hot Honey

10 - ⅓ cup honey
11 - 1½ tablespoons hot sauce
12 - ½ teaspoon red pepper flakes

→ Caesar Salad

13 - 4 cups romaine lettuce, chopped
14 - ½ cup Caesar dressing
15 - ¼ cup grated Parmesan cheese
16 - ½ cup cherry tomatoes, halved
17 - 1 cup croutons

→ Wraps

18 - 4 large flour tortillas, 10-inch

# Directions:

01 - Place chicken strips in a bowl and cover with buttermilk. Allow to marinate for at least 15 minutes at room temperature.
02 - Combine all-purpose flour, panko breadcrumbs, garlic powder, smoked paprika, salt, and black pepper in a shallow dish and mix thoroughly.
03 - Remove marinated chicken strips from buttermilk and dredge thoroughly in the breadcrumb mixture until evenly coated on all sides.
04 - Heat ½ inch of vegetable oil in a large skillet over medium-high heat. Working in batches, fry chicken strips for 4-5 minutes per side until golden brown and internal temperature reaches 165°F. Transfer to paper towels to drain excess oil.
05 - Combine honey, hot sauce, and red pepper flakes in a small saucepan. Warm over low heat for 2-3 minutes until ingredients blend together. Remove from heat immediately.
06 - Transfer fried chicken strips to a clean bowl and pour hot honey sauce over them. Toss gently until all pieces are evenly coated.
07 - In a large bowl, combine chopped romaine lettuce, Caesar dressing, grated Parmesan cheese, halved cherry tomatoes, and croutons. Toss until all ingredients are evenly coated with dressing.
08 - Heat tortillas in a dry skillet over medium heat for 30 seconds per side, or microwave wrapped in a damp paper towel for 45 seconds until pliable.
09 - Lay each warm tortilla flat. Divide Caesar salad mixture evenly among the four tortillas, placing it in the center. Top each portion with hot honey chicken strips. Fold in the sides and roll tightly from bottom to top.
10 - Slice each wrap diagonally in half. Serve immediately while still warm.

# Expert Tips:

01 -
  • The hot honey hits different when its homemade and you can control exactly how much heat goes into it
  • These wraps reheat surprisingly well for lunch the next day, unlike most crispy chicken situations
  • The whole thing comes together in under an hour but tastes like something you would wait in line for at a food truck
02 -
  • The oil temperature matters too cold and the chicken gets greasy, too hot and the coating burns before the meat cooks through
  • Do not overcrowd the pan when frying or the oil temperature will drop and you will lose that perfect crunch
  • The hot honey thickens as it cools, so toss the chicken right after you make it for the best coating
03 -
  • Pat the chicken dry before marinating so the buttermilk actually sticks instead of sliding right off
  • Use one hand for wet ingredients and one for dry to keep your fingers from getting completely coated in batter
  • Let the chicken rest on a wire rack instead of paper towels to keep the bottom from getting soggy
