# Directions:

01 - Bring 2 cups water to a boil in a medium saucepan. Add quinoa and 1/2 teaspoon salt. Reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Remove from heat and let stand covered for 5 minutes. Fluff with a fork before serving.

03 - Whisk together tahini, lemon juice, maple syrup, minced garlic, water, salt, and black pepper until smooth and creamy. Add additional water 1 teaspoon at a time to reach desired pourable consistency.
04 - Divide cooked quinoa evenly among 4 bowls. Arrange chickpeas, red cabbage, carrots, cherry tomatoes, bell pepper, cucumber, spinach, and avocado in colorful sections atop the quinoa.
05 - Drizzle tahini dressing generously over each bowl. Sprinkle with toasted pumpkin seeds and sesame seeds. Serve immediately while vegetables are crisp and avocado is fresh.

# Expert Tips:

01 -
  • Everything can be prepped ahead so lunch comes together in under five minutes on busy days
  • The tahini dressing is so good you will want to put it on absolutely everything
02 -
  • The tahini dressing thickens as it sits so keep extra water on hand to thin it again before serving
  • Avocado turns brown quickly so slice it right before serving and squeeze a little lemon over the pieces
03 -
  • Toast your seeds in a dry pan until fragrant and golden before sprinkling them on top
  • Massage the cabbage with a little salt and lemon juice to soften it slightly before adding
