# Directions:

01 - Preheat the oven to 375°F. Lightly grease a standard 6-cup muffin tin with nonstick cooking spray.
02 - In a large skillet, cook bacon over medium heat until just beginning to crisp but still pliable, about 5 to 6 minutes. Drain on paper towels.
03 - In a medium bowl, whisk together eggs, whole milk, cheddar cheese, salt, and pepper until smooth. Fold in chopped chives if using.
04 - Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
05 - Twist each bacon strip into a loose spiral and place on top of each filled muffin cup.
06 - Bake in the preheated oven for 15 to 18 minutes, or until eggs are set and lightly golden.
07 - Allow to cool for 2 to 3 minutes before carefully removing from the pan. Serve warm.
