# Directions:
01 - Set the oven to 400°F to prepare for roasting vegetables.
02 - Combine diced bell peppers, chopped zucchini, sliced red onion, and halved cherry tomatoes with olive oil, Italian herbs, salt, and pepper. Spread evenly on a baking sheet and roast for 20 to 25 minutes, stirring halfway through, until tender and lightly caramelized.
03 - In a large pot of salted boiling water, cook the bow tie pasta according to package directions until al dente. Drain and transfer to a spacious serving bowl.
04 - In a small bowl, whisk together extra-virgin olive oil, lemon juice, lemon zest, minced garlic, honey or maple syrup, Dijon mustard, salt, and pepper until thoroughly combined.
