Ingredients

  • 2 large ripe bananas: mashed
  • 2 large eggs: fresh

Instructions

Step 1:
Preheat oven to 350°F (175°C) Line a muffin tin with 8 paper liners or lightly grease
Step 2:
In a medium bowl, mash the bananas until smooth
Step 3:
Add the eggs and peanut butter Whisk together until well combined and smooth
Step 4:
Evenly divide the batter among the prepared muffin cups filling each about 3/4 full
Step 5:
Bake for 16 18 minutes or until a toothpick inserted into the center comes out clean
Step 6:
Cool in the pan for 5 minutes then transfer to a wire rack to cool completely
